If you're anything like me you get in the routine of making the same dinners repeatedly and sometimes a change up is in order. Something new but easy is just my style and I found this amazing thai beef with cabbage. We make vegetarian meals at my house but you can substitute the meat of your choice to any recipe and it will still taste amazing.
All you need is
1 tablespoon of EVOO
1 tablespoon ground turmeric
1 tablespoon cayenne pepper
1 bag of veggie crumbles or 1 lb of meat
4 cups of shredded cabbage
2 roma tomatoes quartered
1/2 cup of peanuts
You can make a few changes to this if you need. I like to keep things simple so if I don't have shallots handy I will just use a medium onion so that I don't have to run out to the store. You can also play with the cayenne pepper if you don't like spicy I would maybe start with just a pinch and taste test until you have the spice level that you like.
Now to begin start by adding your shallots in a pan with your EVOO and cook until they start to soften about 2 to 3 minutes. Next add your dry spices.
Then cook your meat or veggie crumbles through, add in your cabbage and tomatoes cook covered for about 10 minutes. Toss in your peanuts and cover for another 10 minutes and then you're ready to serve.
This recipe only takes about 30 minutes to prepand cook. It taste amazing and is a new recipe to add to the books.
